抹茶红豆蛋糕卷[17P]

这个让番茄相思的抹茶蜜豆蛋糕,只是听名字就是如此的温柔缠绵、优雅浪漫,抹茶和蜜豆是绝配哦!淡淡的抹茶味加上可口的红蜜豆,再來一杯奶茶,細細品味,这样的周末,闲情雅致......
主料 鸡蛋(蛋糕体) (4个) 细砂糖(蛋糕体)(蛋黄中) (20g) 细砂糖(蛋糕体)(蛋白中) (40g) 低筋面粉(蛋糕体) (40g) 抹茶粉(蛋糕体) (10g) 黄油(蛋糕体) (40g)
调料 淡奶油(内陷) (250g) 红豆沙(内陷) (40g) 蜜豆(内陷) (50g)

1黄油提前隔水融化成液体

2蛋黄加20g细砂糖,搅打至黏稠且颜色呈乳白色,体积膨胀。

3蛋清一次性加入70g细砂糖,打到蛋白捞起缓缓从打蛋器上落下,落在盆中形成的纹理不变,而未凝固在打蛋器上即可

4蛋黄加入蛋白中,用刮刀上下翻拌均匀

5过筛入粉类,继续用刮刀翻拌均匀

6将融化的黄油到在刮刀上,快速的用刮刀翻拌,均匀即可

7拌好的面糊倒入铺有烘焙油纸的烤盘中

8利用刮板将蛋糕糊刮平,放入预热好200度的烤箱,中层烤12分钟

9出炉后将蛋糕连着烘焙油纸一起放在晾网上彻底放凉,然后再撕去烘焙油纸

10制作馅料。将40g红豆沙用50g奶油调整稀稠度,效果如图

11200g淡奶油倒入盆中,用打蛋器搅打至出现纹理

12放入红豆沙,继续搅打成馅料

13蛋糕片下垫一张锡纸,采用内卷法,将奶油馅料涂在蛋糕片上,起始端奶油稍厚,末端奶油稍薄,最后3cm左右不涂奶油

14将40g小蜜豆依次排列到奶油馅上

15采用内卷法将蛋糕卷卷起,卷起蛋糕卷后

不錯啊,看到很清淡啊。早上吃這個應該不錯,不過做起來比較麻煩!

抹茶的蛋糕我最爱吃,曾经做过几次,但都是不成功,只能吃不能看
