配料:葱,姜.那个姜丝大家表以为是坏的哈,那是皮,俺没削.因为带皮的姜属凉性,削皮就属热性.现在正是干燥的季节,所以俺就不削皮.

然后调汁.需要用到酱油,盐,味精,鸡精,老抽,花椒粉或是花椒粒,五香粉,料酒,糖,再把切好的葱与姜丝放入,调匀. vnf8I%c

鸡翅放进去腌制一小时左右.记住,中间一定要翻一翻,让鸡翅腌制的均匀些

鸡翅看看差不多表面凉了,水份也没了,就可开炸.锅里放的油够炸这些鸡翅就可以了.锅要热,油温要低.注意,那个鸡翅表面的水份一定要控干了,要不一会开炸有水的话,就要小心了,会嘣到自已的.Ix:L]2\4T5zD

油温大约在四成左右就可以了,不要太高.将鸡翅放入慢火炸到浅黄.G4w%A;?%feLY

搅搅搅,不停的搅,将蛋清打出泡沫与淀粉,面粉搅匀就可.

然后再将炸过一遍的鸡翅全部放入,都沾上调好的淀粉,沾匀称了.!^%x)w

还用刚才的油炸第二遍.刚开始火可开可不开,稍炸一会再开火,最好是小火慢炸.一定不要心急.一直炸到鸡翅表面金黄金黄的,就可开大火,快速炸一下,然后将鸡翅捞出,但一定要注意,不要炸糊了.
