三杯鸡的来源有很多种,有关于文天祥的英雄典故,也有姐姐做菜送弟弟远行的亲情篇,不管具体以哪个为冷,制作三杯鸡的前辈,的确留了一道好菜给后人。n0i*I{)T#i

苏北草鸡一整只,有些饭店喜欢用鸡块做三杯鸡,虽然好吃但没什么营养,用草鸡做更香更有营养

瓶子从左到右,依次是生抽,麻油,台湾米酒,老抽。三杯鸡配料的重要材料就是这几样了。照原始做法是一杯油,一杯酒,一杯酱油,每杯100ML,我每次都放大半杯麻油,80ML吧,酱是拿1/3的老抽和2/3的生抽兑的,兑出来味道刚刚好

切碎的干红椒,香叶两片,八角半个,树皮一小块,都是调味料,本来还要在开锅前放牛至叶的,给忘记了 下次再实验,放了牛至叶是什么味道

上做法,冷锅倒麻油,烧至油热,放入切好的葱与姜片;再倒入切好的鸡块,炒至鸡块成金黄色,再放入鸡肝(一开始放肝会容易碎掉,最后就吃不到了)4IxW f

烧开,放入第一配角,大蒜;本次有个大失误,蒜太多了,成品压住了三杯鸡的酒香味,以后要少放点S_z]PToW

大火再烧开后转小火,烧30分钟,熟啦 香喷喷,入味好吃的三杯鸡诞生 ,d@;c$~9H5Ct3b
其实三杯鸡浓油赤酱的,很附合苏帮菜的标准嘛,以后试试看加点糖,来个苏式三杯鸡,哈哈
